Prof. Frank Monahan
Prof. Frank Monahan is Dean of Agriculture and Head of the School of Agriculture & Food Science at University College Dublin. He is also a Professor of Food Science at UCD with research and teaching interests mainly in meat science.
He is particularly interested in the impact of animal production systems on the nutritional and sensory quality of meat and in meat (and food) authentication, and has published widely on these subjects. He is currently lead investigator on a research project focussed on the “Signature of Irish Grass-Fed Beef”, funded by the Department of Agriculture Food and the Marine. He is also a member of the scientific advisory committee of Safefood.
